Cinnamon
Cinnamomum verum


The inner bark of a tree, carefully peeled by hand. The cinnamon roll is named appropriately.
Cinnamon doesn’t give itself up easily. It’s the inner bark of a tropical evergreen, stripped and peeled by hand; as it dries it curls into the quills you find in the spice jar. Which makes “cinnamon roll” the most anatomically accurate name in the bakery.
